Key Lime Pie Energy Bites are a healthy, fueling treat that taste just like a slice of pie. Gluten free, vegan, and made in just 10 minutes, these key lime energy balls will become a snacking staple.

Ingredients

  • 1/4 cup hemp seeds
  • 1 cup raw cashews
  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 6 pitted Medjool dates
  • 2 Tbsp. maple syrup
  • Zest of 2 limes, plus 2 Tbsp. fresh lime juice
  • Zest of 2 limes, plus 2 Tbsp. fresh lime juice
  • 1 tsp. vanilla extract
  • 1/4 tsp. sea salt
  • Optional for coating: graham cracker crumbs or additional shredded coconut

Instructions

    In the bowl of a food processor, combine cashews, oats, and shredded coconut; blend until finely ground.Add dates, hemp seeds, maple syrup, lime zest and juice, vanilla, and salt; blend until the mixture comes together and forms a dough-like ball.

    Use a small cookie scoop or Tablespoon to measure out 12 portions and roll into balls. If desired, roll balls in graham cracker crumbs or shredded coconut for extra decadence.
